In search of a new taste tried to make  these biscuits with simple ingredients fennel seeds, cardamom and coconut.. Hope you would like it.

INGREDIENTS:
  • Whole wheat flour - 1/2 cup
  • All purpose flour (maida) - 1/2 cup
  • Granulated sugar -  1 tbsp
  • Powder sugar - 2 tbsp
  • Coarsely grinded fennel seeds (sauf) - 1.5 tsp
  • Chilled Butter - 50gm
  • Milk - 1/2 tbsp
  • Coconut powder - 2 tbsp
Note:
  • Butter should be chilled. Cut it in to the small pieces. 
  • Milk is needed just to bind the dough.
  • take out a bit of coconute powder, fennel seeds powder and sugar. This would be used for garnishing.
  • Keep fennel seed powder coarse.

METHOD:
  • Take a mixing bowl mix all the ingredients. First mix the butter, it would being to look like breadcrumbs. Add little milk to make a soft dough.
                                           

  • Make small balls of oval shape from the dough.
  • Now make mixture of coconut powder, sauf  and sugar separately. This is for garnishing. 
  • At the top of cookies milk wash and stick some mixture made above on it.
                                         

  • Preheat the oven at 170c for 10 min.arrange  the biscuits in greased baking tray giving some space between them.
  • Bake the biscuits for around 15 to 20 mins. Keep an eye on it.
  • As biscuits begin to turn brown switch off the bottom rod. Start only top rod for a minute when biscuits top look brown switch off the oven and take them out .
  • Let it cool down completely on the cooling rack.

It is really hard to get the kids eat something healthy.....so here is a great option. Crunchy tasty multigrain biscuits. It has goodness of fiber and dry fruits. There is no baking soda, baking powder used..so all the goodness only.

INGREDIENTS:
  • Whole wheat flour - 1/2 cup
  • Suji (semolina) - 1 tbsp
  • Ragi flour - 1 tbsp
  • Powder oats - 2 tbsp (i used quacker oat)
  • Granulated sugar -  1 tbsp
  • Powder sugar or jaggery - 1/3 cup or  as per your taste
  • Coarsely grinded mix dry fruits - 1 1/2 tbsp
  • Butter - 2 +1/2 tbsp
  • Milk - as required
  • Coconut powder - 2 tbsp
  • Flex seeds (alsi)  - 1 tbsp
Note:
  • Flex seeds should be roasted (to make them crunchy). You can add them directly or make a powder and add it  to dough. You can embed flex seeds on the top of cookies too.
  • Milk is needed just to bind the dough.

METHOD:
  • Take a mixing bowl mix all the ingredients make a soft dough with the milk.
  • Add milk in small quantities.
                                         

  • Now take a rolling board with the help of dry flour roll the dough.it should not be too thick or thin.
  • Using cookies cutter cut the biscuits in round shape or any shape 
  • Preheat the oven at 170c for 10 min.arrange  the biscuits in greased baking try giving some space between them.
  • Bake the biscuits for around 15 to 20 mins.keep an eye on it.
  • As biscuits begin to turn brown switch off the bottom rod. Start only top rod for a minute when biscuits top look brown switch off the oven and take them out .
  • Let it cool down completely.
  • Healthy multigrain biscuits is ready to enjoy.

Hi Friends,
Today's baking is tutty frutty biscuits. They are of different taste and are very soft and melting. Hope you all would enjoy it.

INGREDIENTS:
  • All purpose flour ( Maida ) - 1/2 cup +1/3 cup
  • vanilla custard powder - 1/3 cup
  • Milk powder - 1 tbsp
  • Powder sugar - 1/4 cup
  • Salted butter - 50gm
  • tutti frutti  - 3 tbsp  
  • pineapple essence - 1/4 tsp
  • vanilla essence -  7-8 drops
  • baking powder - 1/2 tsp 

NOTE -
  • Butter should be at room temperature.
  • Use only butter to make the dough. Don't add milk.....butter is what makes them soft and melting. 



METHOD:
  • Take a mixing bowl add maida, custard powder, milk powder, baking powder mix all of these well.
  • Now take another bowl add butter, powder sugar, vanilla essence and pineapple essence mix until it become creamy.
                                             

  • Now mix  all the dry ingredients in the wet ingredients and make a soft dough. 
                                     

  • Take a rolling board and sprinkle dry flour on it so that dough doesn't stick to it. Put small amount of dry flour on roller (to avoid dough sticking to it) roll the dough. It should not to be too thick or thin.
  • Using cookies cutter of any desired shape cut the biscuits.
                                       

  • Preheat the oven at 170c for 10 min.Arrange biscuits in greased baking tray giving some space between them.
                                       

  • Bake the biscuits for around 10 min. Keep on eye on it.
  • As biscuits begin to turn light brown at bottom and sides take them out. Let it cool down completely.
                                   

Tasty tutti fruity biscuits are ready to be enjoyed. You can use any flavor of custard. Keep in mind you need to match main essence to the taste of custard. Vanilla essence would be added always.

I like pineapple flavor so i used that one here.

Hi Friends,
I tried to make fruit biscuits. It is a good tea time savory. Hope you all would enjoy making it.


                                       



INGREDIENTS:
  • All propose flour - 1 cup
  • Powder sugar - 1/4 cup +1 tbsp
  • Fresh ghee - 1/3 cup (chilled)    
  • Baking powder - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Salt - pinch
  • Finely chopped raisins
  • Chopped cashew (slightly roasted ) , dry cherry, dates and tutti frutti - 1/3 cup (take all in nearly same quantity or as per your preference )
  • Rose essence - 1/4 tsp
  • Pineapple essence - 7-8 drops
  • vanilla essence - 10 drops
  • Milk - 1 1/2  tbsp
NOTE :
  • Ghee should be chilled and fresh. Remember to use fresh ghee else the cookie would smell. You can use butter also, butter should be chilled too.
  • If you use salted butter skip adding salt.
  • You can use wheat flour also instead of maida. You would need to increase ghee quantity if you plan to use wheat flour.

 METHOD:
  • In a mixing bowl add ghee, sugar and all essences mix it well. Dont beat.
  • In another plate sieve maida, baking powder, baking soda and salt. Mix them very well.
  • Now add dry ingredient in to ghee mixture and mix properly. For mixing use finger pores and mix slowly, don't beat the mix. Mixture should become crumbly.
                                     

  • Now add mix dry fruits in to it and make a soft dough with the milk. Add milk in small quantities and mix. Dough should not be very smooth, there should be slight cracks in it.
                                                     

  • Take a rolling board and with the help of dry flour roll the dough. it should not be too thick or thin .
  • Using cookies cutter cut the biscuits in square shape.
                                                       

  • Preheat the the oven at 170c for 10 min. Arrange biscuits in greased baking tray giving some space among them.
                                       

  • Bake the biscuits for around 10 min. keep an eye on it.
                                                 

  • As biscuits begin to turn brown switch off the bottom rod. Start only top rod for a min when biscuits top looks brown, switch off the oven and take them out. Let it cool down completely.
  • Tasty fruits biscuits are ready to be enjoyed.  
                                           
                                                       

FRUIT BISCUITS

Hi friends,
Today i made Karachi bakery style cashew nuts biscuits.
These are favorite of my family at tea time. Hope you would like it too.



INGREDIENTS:
  • All purpose flour (maida)  - 1 1/2 cup
  • Granulated powder sugar - 1/2 cup
  • Unsalted butter - 100 gm + 1 tbsp
  • Coarsely grind cashew nuts  - 1/2 cup
  • Chopped cashew - 1/4 cup
  • Vanilla essence - 1/4 tsp
  • Baking powder - 1/2 tsp
Note:
  • If you can get unsalted butter it would be good,  you can use salted butter as well. It will taste a bit different. 
  • Butter should be on room temperature
  • Make the dough with butter only
  • If you don't know the butter and dry ingredient measurement correctly...you can use this trick. Take butter and mix sugar in it. Add dry ingredient slowly kneading  constantly. When you see the dough is soft and bonded fully with butter stop adding all purpose flour. This has always worked for me.

METHOD:
  • In a mixing bowl add butter and sugar mix properly.
  • Now add vanilla essence and cashew nuts powder mix it well.
                                     

  • Then add sieved maida, baking powder in to it and make a soft dough.
  • Wrap the dough in cling rep and put it in the fridge for half an hour.
                                           

  • after half an hour take out the dough.
  • dust some flour on a rolling board and roll the dough. it should not be too thin.
  • take chopped cashew spread on the rolled dough
  • roll the roller with light pressure, so that all chopped cashew get embedded in the dough.
  • using cookies cutter,  cut the cookies in  square  shape. 
                                         

  • preheat the oven at 170 c for 10 min.
  • bake the cookies for around 10 min. keep an eye on it. As soon as cookies turn a little brown take them out. let it cool down completely.
                                           

  • Tasty beautiful cashew cookies are ready to be enjoyed.

                                           

    CASHEW NUTS BISCUITS

    Hi Friends,
    Today's cookies are tricolor candy cookies. Specially loved by kids and perfect add on to any small home gathering. Hope you all would love it.

    You can add any color/flavor of your choice. Hope you would enjoy this :)






    INGREDIENTS:
    • all purpose flour -1 1/2 cup
    • powder sugar - 1/2 cup 
    • butter - 100 gm + 1/2 tbsp
    • mix dry fruits powder - 1/2 cup
    • vanilla essence - 1/4 tsp
    • orange essence - 10 drop
    • melted chocolate - 2 tsp
    • orange food color - as required
    Note : 
    • Pre heat oven for 10 mins at 170c
    • butter should be at room temperature.
    • You can use whole wheat flour also
    • You can take orange color from carrot juice.

     METHOD:
    • in a mixing bowl mix all purpose flour, sugar, dry fruit powder, butter and make a soft dough. Do not over mix.

    • Divide dough in 3 equal parts. 
    • Add Orange food color and orange essence in one part and mix it well.
    • Add vanilla essence and melted chocolate mix in second part and mix it well.
    • Leave the third part plain. 
    • Take a square sized box and line it with butter paper.
    • Put the orange part and fill the box evenly with it, making a layer of it.
    • now put chocolate dough and make an even layer of it.

    • Now put the white plain dough and make an even layer of it.
    • Put it in fridge for 45 mins
    • Take the dough out and out even width pieces from it. 

    • cut triangles from it, you can cut in zig-zag. try to keep them of same size.
    • Put it on baking tray and put it to bake for 10-15 mins.
    • Take out the cookies, and let them cool.
    • Cookies are ready to be enjoyed.


     


    TRICOLOUR CANDY COOKIES

    Hi friends,
    Today i made appricot jam stuffed cookies. These cookies are special as we normally prepare the cookie part and do the stuffing just before the serving. Also you can use different jams for stuffing giving them different flavors.

    These come in handy and can be made as per persons taste. Hope you would like it.

                                             



    INGREDIENTS:
    • All purpose flour (maida)  - 1 1/2 cup
    • powder brown sugar - 1/2 cup
    • unsalted butter - 100 gm + 1 tsp
    • almonds powder - 1/2 cup
    • apricot jam - 1/4 cup

     METHOD:
    • Mix all the ingredients well and make a dough .
                                   

    • wrap the dough in cling rep and put it in the fridge for half an hour.
                                                 

    • after half an hour take out the dough.
    • dust some flour on a rolling board and roll the dough. it should not be too thin or too thick.
    • using cookies cutter,  cut the cookies in  round shape.
    • now make a hole in the center of the cookies. You can use any small object or carve it out with hand.
    • half of the cookies should have a hole and the other half should not.
    • preheat the oven 180 c for 10 min.
    • bake the cookies around 10 min . keep an eye on it. As soon as cookies turn a little brown take them out. let it cool down completely.
                                         

    • put jam on the cookies with out the holes, then top them with the cookies with the hole.
    • yummy apricot jam cookies are done, sprinkle a bit of powder sugar for garnishing .
    Note : You can use any jam you want. Also please don't leave the cookies with jam on it, else they would become mushy.
