Hi friends,
Today i made appricot jam stuffed cookies. These cookies are special as we normally prepare the cookie part and do the stuffing just before the serving. Also you can use different jams for stuffing giving them different flavors.

These come in handy and can be made as per persons taste. Hope you would like it.

                                         



INGREDIENTS:
  • All purpose flour (maida)  - 1 1/2 cup
  • powder brown sugar - 1/2 cup
  • unsalted butter - 100 gm + 1 tsp
  • almonds powder - 1/2 cup
  • apricot jam - 1/4 cup

 METHOD:
  • Mix all the ingredients well and make a dough .
                               

  • wrap the dough in cling rep and put it in the fridge for half an hour.
                                             

  • after half an hour take out the dough.
  • dust some flour on a rolling board and roll the dough. it should not be too thin or too thick.
  • using cookies cutter,  cut the cookies in  round shape.
  • now make a hole in the center of the cookies. You can use any small object or carve it out with hand.
  • half of the cookies should have a hole and the other half should not.
  • preheat the oven 180 c for 10 min.
  • bake the cookies around 10 min . keep an eye on it. As soon as cookies turn a little brown take them out. let it cool down completely.
                                     

  • put jam on the cookies with out the holes, then top them with the cookies with the hole.
  • yummy apricot jam cookies are done, sprinkle a bit of powder sugar for garnishing .
Note : You can use any jam you want. Also please don't leave the cookies with jam on it, else they would become mushy.

 HI Friends,
Today we would make chocolate chips filled chocolate cookies. This is an ultimate fantasy of a chocolate lover and liked by everyone. A must try i should say.






INGREDIENTS:
  • All purpose flour (maida) - 1/2 cup
  • Powder brown sugar - 2 tbsp
  • Butter - 2 tbsp ( salted )
  • Cocoa powder - 1 tbsp
  • Baking powder - 1/2 tsp
  • Vanilla essence - 10 drops
  • Choco chips - 1/3 cup
  • Melted chocolate - 1 tsp

How to melt chocolate in microwave: 
Chocolate should be on room temperature. microwave it for 20secs and then try to mix it. If chocolate becomes soft and turns into thick paste it is melted else it needs more heating. Reheat for 10 secs and try the mixing again. Put chocolate for short time bursts and not for a continuous long time, else it may burn.

How to melt chocolate on gas stove: 
Take water in a bowl and heat it. put another small bowl on top it. Basically we want to trasnfer heat from boiled water to this another pan. Chocolate should be on room temperature.Put it in the inner bowl and slowly stir it to mix it....once it turns soft take it off and mix it well. This technique is called double boiler.

 METHOD:    
  • Blend butter and sugar in mixing bowl. Blend it till it becomes white and creamy. 
  • Now add vanilla essence, chocolate and mix it well. Keep it aside.
  • Sieve all purpose flour, baking powder and cocoa powder in a separate bowl.
  • Now mix the dry ingredient in the wet ingredient and mix it well. Make a dough of this.
  • Take a dough and put it in the fridge for half an hour.

  • After half an hour take out the dough. make small balls from the dough.   
  • Make an impression in the center of cookie with thumb and  put the choco chips in the center. Cover and roll in the ball. (This is similar the way you do filling in kachori)

  • Place on the baking try . Put the baking tray in the preheated oven and let it bake for about 15 mins at 160 c.
  • Keep an eye on it, check it once after 10mins. 
  • Cookies are done, sprinkle a bit of powder sugar for garnishing.

NOTE -
             It is difficult to know when chocolate cookies are done. Check the side of the cookies, if it is hard then cookies are baked.
             For preheating switch on both rods.
             Butter should be at room temperature.

Hi friends today we would make salty jeera cookies......my favourite tea time snacks. Hope you would like it.

 

 


INGREDIENTS:
  • All purpose flour (maida)  -  1.5 cup
  • Butter - 1/2 cup (if it is salted, please adjust salt quantity accordingly)
  •  Powder sugar - 3 tbsp
  • Baking powder -  1 tsp
  • Salt -1/2 tsp
  • Cumin seeds (jeera) - 2 tsp
  • Carom seeds (ajwain) - 1/2 tsp
  • Milk - 1/2tbsp

Note : Preheat oven at 170c for 10 mins and butter should be on room temperature.

 METHOD:
  • Blend butter and sugar in a mixing bowl (wet ingredient). Blend until it become creamy.

  • Sieve all purpose flour, Baking powder and salt.
  • Crush cumin seeds and carom seeds with your palm, this will enhance the flavor. Add it in the sieved mix (dry ingredient).
  • Now mix the dry ingredients in wet ingredient. Keep adding in small quantity and mix well with light hand. Repeat until the entire dry ingredient is mixed in wet ingredients.

  • Make a dough of this. If you feel dough is dry, you can add some milk to help.

  • Rest the dough for 15 to 20 min.
  • After 20 minutes roll dough sheet for cookies.
  • Now cut the cookies from it. i use cookies cutter (i have round and heart one, you can get different shapes from market). To cut cookies with cookie cutter dip the cutter in dry flour and cut the cookies.
  • To stick jeera on them milk wash cookies (apply milk on top of cookies with a brush) and stick jeera on it.
  • Place the cookies in greased baking tray.

  • Preheat oven at 170c. Now place the cookies in the oven.   
  • Bake for 10 to 15 min. Keep an eye on it as soon as it turn slight brown take the tray out.
  • Cookies are ready .
  • Store them in airtight container once they cool down completely.

EGGLESS SWEET AND SALTY JEERA (CUMIN SEEDS ) COOKIES

Hi friends made Cornflake cookies, these cookies have a unique taste as the core part is soft which melts in mouth and the cover part is crunchy. This would definitely be the favourite of kids.
         
 
                                                               

Note : Use honey cornflakes, this will enhance the taste much more and would make the top part enjoyable.


Serves : makes around 12 pieces
Baking time : 15-20 mins
preparation time : 15 mins

INGREDIENTS:
  • refined all purpose flour (maida) - 140gm
  • powder suger - 100gm
  • Butter  -- 50 gm
  • Cornflakes -- 1/2 cup ( i use honey cornflakes )
  • vanilla essence -- 1/2 tsp
  • Baking powder -- 1/2 tsp
  • Milk  -- 1 cup

 Note : Preheat oven at 170c for 10 mins.

 METHOD:

  • Blend  butter and sugar in a mixing bowl. Blend it until it becomes white and creamy. Once it becomes creamy add vanilla essence into it.
  • sieve all purpose flour and baking powder in a separate bowl.
  • Now mix this dry ingredient in the wet ingredient. Add it in small quanitity and mix it well. Don't over blend it, we want to make a dough of this.
                                                   

  • Mix milk and make soft dough out of the mix. Make small balls from this dough.
  •  Dip these balls in milk and coat them with cornflakes. Cornflakes would get embedded on the surface, don't press it too much else it will go inside.
                                         

  •  put the baking tray in the pre heated oven and let it bake for 15-18 mins at 170c. Keep an eye on it as soon as it turns slight brown take the tray out.
                                       

Note:
  • For preheating switch on both rods.
  • The dough should be soft, else it will not take the correct shape.
  • Butter should be on room temperature.
