Paneer (Cottage cheese) that we get from market is normally made with whole milk.....however for health conscious people this is often a no - no. So here is the way you can make paneer at home with toned milk.
I am pure vegetarian so paneer is my main source of protein.

Ingredients:
  • Toned milk - 1ltr
  • 1 lemon juice - 1 tbsp
  • Cotton cloth -- muslin cloth
Method:
  • Turn on the stove and boil milk.

  • When milk is boiling start adding small quantity of lemon juice and stir the milk.

  • Repeat the step until all of lemon juice is added.
  • Switch off the gas.
  • Milk will now start to separate.
  • Leave it aside for 2 min after that milk solid part would have separated completely.

  • Now take a cotton cloth (muslin cloth) and filter to separate solid portion of the milk.

  • Pour cold water on the paneer or chenna to wash away the sourness of lemon juice.
  • Remove excess water from the paneer by pressing with a heavy object ( i use rolling board ).
  • This solidifies the paneer . leave it like that for 20 to 25 min.

  • Now paneer is ready.cut in to cubes or any shape u like.
