BEETROOT PARATHA

Time to prepare : 30 minutes
Serves : 2

Beetroot is a good source of fiber they are also low in calories and naturally sweet. It can normally be eaten as salads but kids despise salads. So you can use this recipe to include beetroot in their diet.
Thanks to my friend Manisha for the recipe.

Ingredients:

  • Wheat flour
  • Carom seeds (ajwain)  -- 1/2 tsp
  • Salt as per taste
  • Water

Dough preparation  :  Mix all the ingredients and make soft dough. Leave it aside for 5 minutes.

Preparing filling:

Ingredients :
  • 1 medium size beetroot grated
  • ginger finely chopped -- 1 tsp (finely chopped)
  • onion 1 medium -- finely chopped
  • corriander powder - 1 tsp
  • green chilly -- as per taste
  • garam masala - 1/2 tsp
  • oil--2 tbsp
Method:

  •  Take onion in a pan add and saute it for a while.
  • Add grated beetroot and saute it for a minute.
  • Add ginger coriander powder, green chilly, salt and garam masala.
  • Mix all the ingredients.

  • The purpose of saute is to make the filling dry....so after adding all the ingredients saute until the mixture is slightly dry.
Making Parathas:
  • Make 2 flat bread of the dough of same size.
  • Spread the filling on one and put the other one on top of it.

  • Just press around the periphery to seal the breads together.
  • Fry the parathas by applying oil/butter on each side.
Beatroot parathas are ready. You can server it with curd or chutney.
