CASHEW NUTS BISCUITS


Hi friends,
Today i made Karachi bakery style cashew nuts biscuits.
These are favorite of my family at tea time. Hope you would like it too.



INGREDIENTS:
  • All purpose flour (maida)  - 1 1/2 cup
  • Granulated powder sugar - 1/2 cup
  • Unsalted butter - 100 gm + 1 tbsp
  • Coarsely grind cashew nuts  - 1/2 cup
  • Chopped cashew - 1/4 cup
  • Vanilla essence - 1/4 tsp
  • Baking powder - 1/2 tsp
Note:
  • If you can get unsalted butter it would be good,  you can use salted butter as well. It will taste a bit different. 
  • Butter should be on room temperature
  • Make the dough with butter only
  • If you don't know the butter and dry ingredient measurement correctly...you can use this trick. Take butter and mix sugar in it. Add dry ingredient slowly kneading  constantly. When you see the dough is soft and bonded fully with butter stop adding all purpose flour. This has always worked for me.

METHOD:
  • In a mixing bowl add butter and sugar mix properly.
  • Now add vanilla essence and cashew nuts powder mix it well.
                                     

  • Then add sieved maida, baking powder in to it and make a soft dough.
  • Wrap the dough in cling rep and put it in the fridge for half an hour.
                                           

  • after half an hour take out the dough.
  • dust some flour on a rolling board and roll the dough. it should not be too thin.
  • take chopped cashew spread on the rolled dough
  • roll the roller with light pressure, so that all chopped cashew get embedded in the dough.
  • using cookies cutter,  cut the cookies in  square  shape. 
                                         

  • preheat the oven at 170 c for 10 min.
  • bake the cookies for around 10 min. keep an eye on it. As soon as cookies turn a little brown take them out. let it cool down completely.
                                           

  • Tasty beautiful cashew cookies are ready to be enjoyed.
